Boozie's Apple Cake


                                                      Boozie's Apple Cake  
                                                        (from Cafe Beaujolais Cookbook)


4 cups apples, unpeeled, cored and cut into 1/2-inch cubes

2 cups flour

2 tsp. baking soda

3/4 tsp. salt

2 tsp. cinnamon

2 eggs, beaten

1/4 cup white sugar

2 cups brown sugar plus 1/4 cup water

1 tsp. vanilla extract

1/2 cup corn oil

1 cup coarsely chopped walnuts


   Bake walnuts at 325 degrees for 10-15 minutes. To remove brown skin, put baked walnuts in a sieve or strainer and agitate them, or rub them with a towel.




   Sift together flour, baking soda, salt, and cinnamon, and set aside.





 Beat eggs, white sugar, brown sugar and water, vanilla and corn oil,






 then add flour mixture and toasted walnuts





 When thoroughly blended, add apples, and stir






  Pour into a greased 9 x 13 x 2-inch pan, and bake at 325 degrees for 65 to 75 minutes. Serves 12.

  1. This is one of my go to cake recipes. Great consistancy, almost like brownies. Also good with streusel topping or a drizzle of confectioners sugar with milk...ver versatile and everyone loves it
